Overview
Accelerate is a youth development program in hospitality management or professional cookery spanning three years. It is aimed at South African nationals and designed to drive increased engagement and interest in the growing sector. The objective is to provide practical and academic development as a foundation for a career in hospitality.
Applicants must have a year of practical hotel experience. If that experience is with a Marriott property they are referred to as Orientation Trainees. The orientation year provides realism of career choice and suitability but does not guarantee acceptance into the three‑year program. Candidates will apply for the first‑year intake at the end of their orientation year.
Job Summary
During the orientation year, Hospitality Management Trainees work in all hotel departments; Professional Cookery Trainees work in all kitchen sections. The goal is to gain practical insight into hotel operations and decide whether to pursue the three‑year program.
Orientation Trainees must follow all company policies, maintain professional appearance, protect proprietary information, and provide excellent guest service. They must also comply with quality standards, handle light physical tasks, and perform other reasonable duties.

What to Expect If You Apply for the 3‑Year Program After Completing Orientation
The 3‑year In‑Service Trainee Program immerses participants in Marriott’s culture and business. Trainees are assigned to a new Marriott hotel each year, experiencing city centre, resort, country, and different star‑grades under varied management styles. They spend at least one year with each hotel, with transfers in January and placement notifications at the end of November.
Each year focuses on different aspects of the business; for Hospitality Management : Year 1 – F&B operations, Year 2 – Rooms Division, Year 3 – Back‑of‑House & management. For Professional Cookery : Year 1 – Cold food, Year 2 – Hot food, Year 3 – All food preparation and management. Theoretical training includes study releases, short courses, and eLearning, with portfolio completion required.
Graduates are required to take up employment with the company for one year after graduation, and the company supports them in securing suitable full‑time permanent employment.
