Job description

We are seeking a skilled Sous Chef Breakfast to oversee breakfast operations, ensuring exceptional food quality, service efficiency, and guest satisfaction. The successful candidate will work closely with the Executive Chef and F&B team to deliver a seamless breakfast experience for all hotel guests.

Critical Criteria (Requirements)

  • Minimum 35 years experience in a Sous Chef role, preferably focused on breakfast or a similar F&B outlet in a 4 / 5-star hotel or luxury resort
  • Proven experience in supervising kitchen teams and managing high-volume breakfast operations
  • Strong knowledge of food preparation, presentation, and hygiene standards
  • Culinary qualification or diploma advantageous
  • Excellent communication, leadership, and organisational skills
  • Ability to remain calm and efficient in a fast-paced, high-pressure environment
  • South African citizen with a valid ID

Duties & Responsibilities

  • Assist the Executive Chef in planning and preparing breakfast menus
  • Supervise breakfast operations, ensuring timely, high-quality food production
  • Manage and coach junior kitchen staff, ensuring adherence to SOPs and culinary standards
  • Monitor food quality, presentation, and portion control during service
  • Ensure compliance with hygiene, health, and safety regulations
  • Collaborate with F&B and service teams to ensure smooth coordination during breakfast service
  • Assist with inventory management, stock rotation, and ordering of breakfast ingredients
  • Support continuous improvement of culinary techniques, workflows, and guest satisfaction
