Minimum Requirements
- Minimum 5 years procurement/purchasing experience, with solid management-level experience
- Current or recent procurement experience within a hotel environment is essential
- Proven experience managing procurement within a large, busy and high-volume hospitality operation
- Strong understanding of hotel purchasing processes, stock control and departmental requirements
- Experience purchasing across F&B, Kitchen, Housekeeping, Engineering, Front Office and general hotel operations
- Strong knowledge of supply chain management, supplier sourcing, vendor management and procurement controls
- Proven experience negotiating supplier contracts, pricing and service-level agreements
- Strong financial and commercial acumen with demonstrated cost-saving and cost-control achievements
- Experience with operational purchasing, Capex and project-related procurement
- Strong analytical, reporting and problem-solving skills
- Experience leading and developing a procurement/purchasing team
- Excellent organisational skills with the ability to manage multiple priorities in a fast-paced environment
- Relevant qualification in Procurement, Supply Chain Management, Finance, Business Management or a related field advantageous
- Experience with hotel purchasing, inventory or stock-control systems advantageous
- Valid South African ID required
Key Responsibilities
Strategic Procurement Management
- Develop and implement a comprehensive procurement strategy aligned with the hotels operational and financial objectives.
- Oversee all purchasing requirements, including operational, Capex and project-related procurement.
- Establish, maintain and enforce procurement policies and procedures.
- Continuously review purchasing trends, pricing and supplier performance to achieve the best quality at the best possible commercial value.
- Identify opportunities to improve efficiencies, consolidate purchasing and reduce unnecessary expenditure.
Vendor & Supplier Management
- Source, evaluate, qualify and appoint suitable suppliers.
- Build and maintain strong, professional supplier relationships.
- Negotiate contracts, pricing, payment terms and SLAs.
- Conduct regular supplier evaluations, audits and performance reviews.
- Ensure suppliers consistently meet the hotels standards for quality, pricing, availability and service.
- Facilitate annual supplier engagements and identify opportunities for value-added partnerships.
Operational Procurement
- Coordinate daily procurement requirements across all hotel departments.
- Ensure the uninterrupted supply of products and services required for hotel operations.
- Monitor stock levels, stock turnover, purchasing patterns and waste.
- Review and approve purchase orders in accordance with delegated authority and internal controls.
- Monitor deliveries and resolve shortages, quality concerns, pricing discrepancies and supplier-related issues.
- Work closely with operational departments to anticipate requirements and avoid unnecessary emergency purchasing.
Financial Control & Reporting
- Partner with Finance and operational leaders to manage procurement budgets and forecasts.
- Maintain accurate purchasing and supplier documentation.
- Conduct cost-benefit and pricing analyses.
- Track procurement performance and report on savings, supplier performance and purchasing trends.
- Identify and implement sustainable cost-saving initiatives without compromising operational or guest standards.
Compliance & Risk Management
- Ensure procurement practices comply with applicable South African legislation, financial controls and company policies.
- Maintain transparent and ethical procurement practices.
- Promote responsible sourcing, sustainability and local supplier engagement where commercially appropriate.
- Identify and mitigate procurement and supply-chain risks.
- Ensure appropriate controls are maintained throughout the purchasing process.
Team Leadership
- Lead, coach and develop the procurement team.
- Ensure the department operates efficiently within a demanding, high-volume hotel environment.
- Establish clear standards of accountability and performance.
- Promote collaboration between Procurement, Finance and hotel operational departments.
- Review and continuously improve SOPs relating to purchasing, receiving and stock control.

We are looking for a hands-on hotel procurement professional, not simply someone with general purchasing experience.
