Job description
The Perdeberg Group, situated in the Paarl Wine region, is seeking a skilled and passionate individual to join their team as Chef de Partie. This role forms part of a small, high-quality kitchen on a working wine estate, preparing consistent, seasonally driven dishes that complement the estate’s wine offering. The role requires a hands-on and flexible approach, contributing to both à la carte service and a variety of private and wine-focused functions.
Responsibilities
- Taking ownership of an assigned kitchen section, including mise en place and consistent execution of dishes to required standards
- Working flexibly across sections and supporting the kitchen team during peak service periods
- Assisting with seasonal menu development, wine-pairing dinners and other special offerings
- Supporting functions and events, including weddings, private tastings and corporate bookings
- Managing stock rotation and control, minimising waste, and assisting with stock takes, deliveries and ordering
- Maintaining strict food safety, hygiene and HACCP standards, and supporting junior kitchen team members where required
Essential qualifications, skills, and experience
- Minimum 2-3 years' experience as a CDP or strong Demi Chef de Partie ready to step up, ideally in a farm-to-table, or estate/winery restaurant environment
- Food safety/hygiene certification required, a Culinary qualification will be advantageous
- Valid driver's license and own reliable transport
- Willingness to work weekends, public holidays and seasonal peak periods
- Experience working with seasonal, local, or farm-sourced produce, and experience with baking/pastry basics is preferred
