Job Description

A prestigious luxury lodge in Pongola, Kwazulu-Natal is seeking an experienced Sous Chef to join its dynamic hospitality team. This is an exciting opportunity for a culinary professional with strong management skills and a passion for delivering exceptional food standards in a big 4/5-star lodge environment. The role offers the chance to lead and train a kitchen team, compile and implement menus, and ensure high standards of presentation and hygiene. French-speaking candidates will be given preference, making this a unique opportunity for bilingual professionals in the hospitality industry.

Job Requirements

• 4-5 years' previous Sous Chef experience in a big 4/5-star lodge (essential)
• French-speaking skills preferred and advantageous
• Strong management and training abilities
• Cooking and hygiene qualifications beneficial
• Menu compilation and implementation expertise
• Ability to coordinate kitchen team with attention to detail and presentation
• Stock ordering and staff rostering experience
• Knowledge of dietary requirements
• Skilled in creating and maintaining training manuals and control documents
• Strong understanding of stock procedures and control
• Knowledge of planning, budgeting, and departmental administration
• Food Portfolio required with application
