We are seeking a dedicated and skilled Sous Chef - Breakfast with experience in large-scale 4 or 5-star hotels to join our culinary team. Reporting to the Executive Chef, you will take ownership of all breakfast operations, ensuring that every guest enjoys a high-quality, consistent, and memorable dining experience . This role requires a hands-on professional who can lead a breakfast team, manage food preparation, and uphold the highest standards of quality and presentation.
Experience & Requirements
Minimum 23 years experience as a Sous Chef in large-scale 4 or 5-star hotel kitchens
Formal culinary qualification or diploma (advantageous)
Strong knowledge of breakfast cuisine, modern cooking techniques, and buffet operations
Excellent leadership, communication, and interpersonal skills
Proven ability in food cost management, stock control, and supplier liaison
High attention to detail and a commitment to culinary excellence
Must hold a valid South African ID

Duties & Responsibilities
Oversee daily breakfast operations, ensuring high standards of food quality and presentation
Prepare, cook, and plate breakfast dishes in line with recipes and luxury standards
Lead, mentor, and supervise the breakfast kitchen team, promoting teamwork and accountability
Assist with menu planning, innovation, and seasonal offerings for breakfast service
Monitor stock levels, control costs, and manage supplier orders efficiently
Ensure hygiene, safety, and compliance with all food handling regulations
Maintain equipment, monitor kitchen cleanliness, and uphold health and safety standards
Collaborate with the F&B and service teams to ensure smooth breakfast service
Handle guest requests and feedback professionally, ensuring prompt resolution
Support training and development of junior chefs in the breakfast team
